Many of us are well aware of macronutrients, such as carbohydrates, protein and fat, as well as micronutrients, such as the vitamins and minerals that are listed on FDA-regulated food labels. But too few of us are familiar with phytochemicals — plant-based micronutrients that offer many health benefits and may help ward off chronic diseases, such as cancer, diabetes, heart disease and stroke.

It’s a time-tested truth: Plant-based foods, such as fruits, vegetables, legumes, whole grains, nuts and seeds, are good for you. But researchers recently have discovered that plant molecules connect with human cells in striking ways. In other words, we’ve known they were good for you — just not this good.

“I don’t think there’s been this much excitement since vitamins and minerals were discovered more than 100 years ago,” says Beverly Clevidence, PhD, the research leader at the USDA-funded Food Components and Health Laboratory in Beltsville, Md.

The discoveries — partly because of the work of the Human Genome Project — are revolutionizing the way we think about food.

In the past 20 years, for example, researchers have discovered that carrots, kale and peanuts are not just plant tissues embedded with vitamins and minerals that are easily encapsulated in multivitamins. Rather, these plant tissues are made up of tens of thousands of phytochemicals (“phyto” is from the Greek phuton, meaning plant).

You’ve probably heard of a few phytochemicals without even knowing what they are. For example, lycopene is a powerful phytonutrient found in tomatoes that helps fight heart disease and a variety of cancers. And the phenols found in strawberries protect against cancer and autoimmune diseases, and help reverse nerve-cell aging. But there are tens of thousands of other phytochemicals about which most of us know nothing. Experts in the nutrition field are buzzing about these chemicals with tongue-twisting names like glucoraphanin, zeaxanthin and saponin.

“This is an epic time,” says Jeffrey Bland, PhD, president of MetaProteomics, a nutrition research facility in Gig Harbor, Wash. “Some of the discoveries we’ve made since 2000 are so profound that the textbook companies can’t keep up with the information. There are brand-new nutrition textbooks out there that aren’t slightly wrong about phytonutrients, they’re totally wrong.”

When scientists first discovered these mysterious chemicals in the early 1950s, they thought they had found new classes of vitamins. Some were even given names, such as “vitamin P” and “vitamin U.” But on the whole, these chemicals were largely ignored.

“We made the assumption that these tens of thousands of molecules were not useful,” says Bland. “They were considered to be flotsam and jetsam. They were refined out of shelf-stable foods with no worry, because they weren’t ‘essential’ nutrients.”

Technically, those early food manufacturers were right. Phytonutrients are “quasi-nutrients” or “conditionally essential,” meaning that their absence in the body does not cause beriberi, rickets or some other type of deficiency disease. Many nutritionists now believe, however, that a phytonutrient deficiency can lead to conditions much worse than mere scurvy — think chronic diseases such as cancer and diabetes.

As our understanding of these chemicals has increased, so has their number.

The original “vitamin P,” for example, is now known as flavonoids — a phytonutrient subclass that includes more than 4,000 chemicals. And the list continues to grow. In addition to the tens of thousands of phytonutrients, Bland says, there are an undetermined number of classes and subclasses.

“It’s so hard to put a number on it,” he explains. “It’s a constantly changing playing field. One day phytochemists think they’ve got it all worked out, and then suddenly they find a whole new family that previously was not recognized.”

The simple hop plant, for example, has more than 1,000 phytonutrients.

As the number of known phytochemicals has multiplied, so has the positive research. Scientists have discovered limonoids that detoxify the liver, phytosterols that block the growth of tumors, isoflavones that help destroy uterine cancer cells and polyphenols that restore lagging immune systems.

These chemicals repair and nourish the body in various ways. The phenols found in black and red berries, grapes, and eggplant, for example, discourage the development of cancer by blocking the conversion of precursor molecules into carcinogens. Saponins, found in foods such as alfalfa and legumes, inhibit the growth of cancer cells by interfering with their DNA. And flavonoids, found in citrus fruits, red wine and dark chocolate, inhibit a chemical called estrogen synthase, an enzyme that binds estrogen to the receptors in several organs and that can lead to breast and uterine cancers.

It starts with the same process: Intercellular transduction. That’s a mouthful, but essentially it means that phytonutrients convey information in the body. During the conversion from plant chemical to human-body booster, a phytonutrient will bind to the receptor sites on individual cells. The cell receives a message via a series of enzymes, which then trigger the genes to express specific patterns.

For example, sulforaphane, a phytonutrient found in cruciferous vegetables like broccoli, cauliflower and bok choy, helps to boost the body’s detoxification enzymes, which helps us to clear out potentially carcinogenic substances.

Eating a diet steeped in fruits, veggies, legumes and other plant-based foods (see “From Allicin to Zeaxanthin: The Phytonutrient Superstars”) is the best way to ensure you’re getting all the phytonutrients your body needs. While there are a growing number of phytonutrient supplements available, many experts warn consumers away from that option.

The big cautionary tale here is beta-carotene. In 1995, it was considered the ultimate panacea. “There was so much good research on beta-carotene,” says David Williams, PhD, a researcher at the Linus Pauling Institute at Oregon State University in Corvallis. “We were charting nice correlations between beta-carotene in the blood and lower cancer risk. Basically everybody just assumed that beta-carotene was chemo-protective.”

But to the shock of many in the scientific community, two major clinical trials in 1996 indicated that beta-carotene supplements were not only useless against cancer, but actually increased the risk of cancer in smokers.

“That was one of the first big disappointments, and it made people rethink the idea of going after individual phytochemicals,” says Williams.

Mark Farnham, PhD, a plant geneticist who specializes in phytonutrient research at a USDA facility in Charleston, S.C., concurs that current scientific consensus is now leaning toward emphasizing whole foods, rather than supplements, because plant chemicals seem to interact with one another in powerful ways. “There seems to be a synergistic effect between the chemicals in food,” he explains, noting also that this synergy is very hard to study because plant-based whole foods contain so many different bioactive compounds that it would be almost impossible to separate and study the potential health benefits of individual phytochemicals.

Plus, each chemical seems to have its own quirks. The carote-noids in collard greens, sweet potatoes and tomatoes, for example, are best absorbed if they are chopped, puréed or cooked, and eaten with a little fat, such as olive oil. But the glucosinolates found in cruciferous vegetables are most effective when eaten in their raw state and thoroughly chewed, so the plant cell walls release more of the cancer-fighting chemical. “There’s really no useful rule, because they’re all unique,” says Clevidence.

So eat as many fruits, veggies and other plant-based foods as you can, and be sure to choose foods from all around the color wheel — from ripe red tomatoes to princely eggplant to vivid oranges.

“If on a daily basis you incorporate at least seven different colors, you are much more likely to get a wide variety of these nutrients that are healing, that prevent degenerative disease, and that will go to work on every ? tissue, cell and organ of the body,” says nutritionist Ann Louise Gittleman, PhD, coauthor of The Fat Flush Plan (McGraw-Hill, 2002).

And don’t be afraid to go exotic with your color choices. Unusually hued foods add intrigue to your plate, and researchers at Washington State University have found that those foods can yield health benefits as well. Their 2006 study showed that wildly colored spuds contained more phytonutrients than white-fleshed potatoes.

If you need more motivation to eat your veggies, start a vegetable plot, and then chow down on the fruits of your labor. A 1991 study published in the Journal of Nutrition Education found that vegetable gardeners ate significantly more eggplant, sweet and hot peppers, summer squashes, tomatoes, and herbs than did nongardeners.

It’s also a smart idea to avoid pesticide- and herbicide-drenched produce by going organic. Last year, Bland completed a survey of some 50 organics-related research reports and found that the vast majority of organic produce supported higher levels of phytonutrients.

If vegetables don’t usually appeal to you, consider taking just one vegetable-centered cooking class. It might make all the difference, according to a 2005 study in the Journal of Nutrition Education and Behavior. After all, what sounds better: Brussels sprouts, or roasted Brussels sprouts with pine nuts and marjoram?

Ultimately, if your strategy for good health has been limited to popping vitamins, consider what you’re missing: a smorgasbord of beneficial phytonutrients found in wonderful, whole, plant-based foods. Besides, real food has been through the most extensive laboratory experiment ever conducted — natural selection. There’s nothing that’s been proven to nourish our bodies quite so well.

Although this article seems to imply that cooked veggies are good, don't believe it, raw is best, except for Tomatoes-they hold much of their goodidy goodness when cooked, BUT neither they nor any other veggie is nearly as good if cooked because the enzymes are toast[Pardon the pun].

Also vegetables in processed foods are no longer considered by the body as a recognized food source.

FINAL STAGES OF MY JOURNEY?

I feel I've gone as far as I can towards reversing my diabetes and I must address some other factors; like the lifelong case of Candidiasis I've had. Since I've investigated what candidiasis can do in the body and since my doctors refuse to aknowledge that disease has it's origins in a compromised body, I've taken it on myself to bring about my own healing. Quackery you say? Well, my response is that most of what we know as modern medicine is quackery, stabs in the dark. I've had severe allergic responses to all the pharma-junk I've been prescribed. I cannot take their medicines, yet they offer nothing else for my problems.

My problems began when the snake-oil antibiotics were invented and I was way overdosed. Then the food industry in my youth began to make 'convenience' foods, and told us all that the nutritional content of the foods they sold were high, just as high as if they weren't cooked to death. TV dinners, boxed Macaroni and Cheese, Coca Cola, finely milled white flour, white sugar, and the stage was set. Already the flora in my colon was out of balance and a childhood of poor dietary choices and
habits of eating formed out of them. All it took was the packet [yes, only one] of birth control pills the doctor handed me while telling me, "These are the 'safe' ones."

A month later my husband was driving me to the city hospital at about 70 miles per hour because I'd lost half of my bodily control from a massive stroke, an aneurysm in my brain. I was 20 years old. I tried still working with doctors to regain the parts I'd lost, but their only answer was more drugs, I couldn't communicate my problems to them because they, en masse refused to listen. Finally they put me on a mild psycho-tropic that even at half doses caused me to fall asleep in public! The doctor insisted I needed to start taking the full dosage, and then I balked, I quit taking any drugs, by then ASA made me so sick from taking it I could no longer take that either. Then I took one Motrin one evening and my entire face swelled up [yes, this is not an exaggeration] from my nose on down so that I thought I'd get stretch marks. The paramedics came out and gave me an epinephrine shot and a benadryl shot, neither of which took the swelling down, and by this time it was difficult to breathe. I found out I'm also allergic to benedryl,[haha] the allergy medicine.

I've found I can take one Tylenol very rarely for pain and it really helps me then, but I am not so sensitized by being constantly medicated and my own pain defence system kicks in and I don't have nearly the pain others have, from hearing them I can only deduce this of course. But, and here's a great example when I've had toothaches, they really weren't all that bad.

I've known of people lying in bed moaning and I barely let it influence my day, After I had a tooth extracted I had nearly no pain either, I never even filled the pain prescription. I'm not bragging, I'm merely giving anecdotal evidence of what the taking of medicine can cause, more sensitivity, more pain.

At any rate, I'm at a stage where I either stay sick from this candidiasis or I take control. See: Candidiasis Diabetes, and Alphabet diseases

, it came and I'm eliminating all sugars, grains, yeasts, vinegars and mushrooms from my diet that is already all whole foods and pure water. This diet restriction is very important for candidiasis control.

It's very important to keep all yeasts and grains out of the diet while getting rid of the candida imbalance. Candida is a part of our intestinal flora, but the antibiotics/ bad diet etc can cause this normal flora go nuts and try to take over your body, to see the symptoms: IBS, HEMORRHOIDS, CANDIDIASIS-BOWEL TROUBLES.

So, from now on I'll be reporting on the candidiasis symptoms and how my recovery from that is affecting the last of my diabetes. I've already gotten rid of most of my pain. YAY!

Pediatric Nurse

A nurse on the pediatric ward, before listening to the little ones chests,
would plug the stethoscope into their ears and let them listen to their
own hearts. Their eyes would always light up with awe, but she never got a
response equal to four-year old David's comment.

Gently she tucked the stethoscope into his ears and placed the disk over
his heart. "Listen", she said..........."What do you suppose that is?" He
drew his eyebrows together in a puzzled line and looked up as if lost in
the mystery of the strange tap - tap - tapping deep in his chest. Then his
face broke out in a wondrous grin and he asked, "Is that Jesus knocking?"

A hunter took his buddy bird hunting to show how his dog could pin point birds and relay the messages to them.

The dog went into the brush, came back whining. What's he whining, the buddy ask. He's trying to tell us the few birds that are in there are not worth the effort.

Into the brush and back again, the dog came sniffing and grunting. He's trying to tell us we are getting hot on the trail of a flock of birds worth out while.

The next time the dog came out from the brush, he was grabbing sticks and growling, and shaking the fire out of them, and grunting and just throwing an awful excited fit.

What's the dog doing acting in a crazy manner like that, the buddy ask?

He's trying to tell us there are more birds in there than you can shake a stick at!

IBS,HEMORRHOIDS, CANDIDIASIS; THE BOWEL CONNECTION

"There's Fungus among us" is a frequent lament with Diabetes type2 people. Toe nail fungus, Athletes foot, Thrush and overloads of Candida Albicans in the bowel. For me the Candida locks up my colon and makes constipation a constant fact of life.
Just do a search for diabetes-candidiasis or diabetes-IBS and you'll see so many sites deal with the connection it is overwhelming, toss in Fibromyalgia and you'll see that all of this is interrelated.

I tried taking
for the overgrowth and it really helps until it goes nuts again, I've also had rounds of taking probiotics, and they reallly help too.

Of course When the IBS kicks in I have trouble with constipation, and since I've had problematic hemorrhoids for forever I get flare-ups with them too. However, when I took Venapro. I never again had a flare up, and it's been a few years since I took it.

We've all been there. Abdominal cramps, bloating, gas, diarrhea (possibly painful), or constipation.
But most of us haven't had to deal with these severe, painful symptoms day after day, or have them flare up unexpectedly every few months. Those who do may have irritable bowel syndrome.
Although IBS is one of the most common complaints reported to physicians, especially by women, it is not a disease or an infection. And it is not caused by diabetes. It is, rather, a disorder in which the bowel (large intestine) does not work the way it should.
Hormonal changes can also cause IBS, which is why women with this difficulty may suffer increased symptoms during menstruation.
There is some controversy as to whether stress actually causes IBS, but it can definitely bring on a flare-up in those who already have the problem.
Yoder also advises monitoring your blood glucose (sugar) frequently while you're doing your detective work. That will help you pinpoint the way new foods affect your blood glucose, especially during flare-ups.
"Talk with your doctor or dietitian about eating smaller meals, then filling out your food plan with snacks," Yoder adds. "This will also help keep your diabetes in control while helping prevent IBS flare-ups; smaller meals will produce less stimulation along the gastrointestinal tract."


I'm not so sure about that, In my experience smaller meals make my bowel more sluggish less inclined to keep on moving along. I really feel more raw foods help. I think the enzyme/fiber connection really rocks.

As for thrush, toe nail fungus and candidiasis in the gut I swear by CellPower™

Your article “Type 2 diabetes appearing in youths” (SN: 7/10/99, p. 31) is of special interest
to me. I saw no type 2 diabetes in young people when I started medical practice in the early
’60s. By the time I had retired in 1995, such patients were not uncommon in my practice. I
believe monosodium glutamate (MSG) is the cause. MSG is an excitotoxin that works by overstimulating
its nerve target. When MSG is fed to baby rats for the first 9 days of their lives and
then discontinued, the MSG destroys the arcuate nucleus of the pituitary gland. For the rest of
the life of the rat, it will be obese, hypothyroid, and lethargic when compared with controls not
given MSG. Remember, MSG was released on the market in 1948. Just read your food labels.

Way too many food manufacturers are making money off of this stuff, who cares if it directly impacts the health of millions of people. They seek the thrill of great tastes and this is the result.

No strain of rat or mice is naturally obese, so the scientists have to create them. They make these morbidly obese creatures by injecting them with a chemical when they are first born. I found it in my favorite low salt seasoning: Lemon Pepper, sigh, I guess I'll just have to just use my own seasoning instead: Katy's essence another advantage of summer.

-Eat lots of fresh, uncooked vegetables and fruits for all their enzymatic goodness on the allkalizing foods list

WHAT ENZYMES DO FOR US

Even freezing foods damages the enzymatic content of foods, imagine if you will what cooking them does?

There are enzymes in all foods, but since we cook them all the enzymes die.

Why do we need enzymes? What do they do?

Enzymes fall into one of three major classifications. The largest is the metabolic enzymes which play a role in all bodily processes including breathing, talking, moving, thinking, behavior and maintenance of the immune system. A subset of these metabolic enzymes acts to neutralize poisons and carcinogens such as pollutants, DDT and tobacco smoke, changing them into less toxic forms that the body can eliminate. The second category is the digestive enzymes, of which there are about 22 in number. Most of these are manufactured by the pancreas. They are secreted by glands in the duodenum (a valve that separates the stomach from the small intestine) and work to break down the bulk of partially digested food leaving the stomach.

The enzymes we need to consider when planning our diets are the third category, the food enzymes. These are present in raw foods and they initiate the process of digestion in the mouth and upper stomach. Food enzymes include proteases for digesting protein, lipases for digesting fats and amylases for digesting carbohydrates. Amylases in saliva contribute to the digestion of carbohydrates while they are being chewed, and all enzymes found in food continue this process while it rests in the upper or cardiac portion of the stomach. The upper stomach secretes no digestive juices whatsoever, but acts much like the crop of a bird or the first stomach of ruminant animals. It can be described as a holding tank where the enzymes present in raw foods do their work on what we have eaten before this more or less partially digested mass passes on to the lower stomach, about 30 minutes after food is ingested. Hydrochloric acid secretion occurs only in the lower stomach and is stimulated by the passage of food from the upper to lower stomach. (This hydrochloric acid does not digest meat, as is commonly believed, but activates the enzyme pepsinogen to its active form pepsin that digests protein.)

Our body manufaxctures enzymes but have great difficulty doing that if we are not consuming any enzymes. Oh sure you can rock on for a few years, decades even on the rare salad or some occasional crudites served at a party but not enough over the long haul will truely take it's toll. In fact consumption of exclusively cooked foods will put a severe strain on the pancreas where the insulin is manufactured.

I used this source because all the information was in an easily copy and paste mode but I'm reading a great book on enzymes called The Missing Ingredient For Good Health by Lee Uler.

He says we can take handfulls of antioxidants and still be very sick. When a person has been poked, prodded, carved upon, drugged up and nearly destroyed by drugs by Physicians and they've decided it's time for the patiient to die, that patient goes to a cancer center or other alternative health clinic they are then treated with what? Foods, whole uncooked foods and enzyme supplements and then they get well, over and over and over this happens, they just get well and THIS IS AFTER THE DOCTORS SAY THEY ARE JUST GOING TO DIE, PERIOD.

If this information isn't something to get excited about I don't know what is. Pain, Digestive troubles like Leaky-gut and IBS,Gas,constipation etc., heart/circulation problems, cancers, Diabetes and Autism, are all affected adversely by lack of Enzymes. We all need them and supplementing only makes sense!

I am on a crusade people I want everyone to get well, to live in not just ok health but robust, vigorous health, bursting with well-being as our creator intended us to be in.
